Who else wishes they had booked this week off work for the UK heatwave?

Rather than being stuck in the office, you could’ve been relaxing in the garden, soaking up the sun with a good book. If only. We’ll just have to make the most of it at the weekend, by making some delicious, cooling cocktails. A bit of ice and some fruit is practically healthy, right? Chill out with these refreshing cocktails…

1. Frozen Sangria Margarita

The essentials: 1 cup of red wine frozen in an ice cube tray, 2tps of orange liquor, 1tps of fresh lime juice, juice of half an orange, 6 ounces frozen limeade concentrate, 2 shots of tequila, 1 shot triple sec, 1 cup of ice

2. Tequila Sunrise

The essentials: 50ml of tequila, fresh orange juice, 1tbsp grenadine, orange slice, 1 maraschino cherry.

3. Pims punch

The essentials: 250ml pimms, bottle of dry cider,  half an orange, half a lemon, half a lime, 50g strawberries.

4. Rose Sangria

The essentials: 1 peach stoned and sliced, 50g strawberries, 180ml Rose wine, juice of an orange, 1tsp of golden caster sugar, 10ml orange liqueur, 75ml sparkling water.

5. Summer Mimosa Floats

The essentials: 2 scoops of vanilla ice cream, juice of half an orange, top up glass with Champagne until the top.

6. Gimlet

The essentials: 2 limes (zest and juice), 200g caster sugar, 50ml lime cordial, 50ml gin, ice.

7. Hurricane

The essentials: 60ml white rum, 60ml dark rum, 30ml lime juice, 30ml orange juice, 60ml passion fruit juice, 15ml simple syrup, 15ml grenadine.

8. Passion Fruit Martini

The essentials: 2 ripe passion fruits, 60ml vanilla vodka, 30ml passoa, 1 tbsp lime juice, 1 tbsp sugar syrup, shot of prosecco on the side.

9. Dark and Stormy 

The essentials: 50ml dark rum, 25ml fresh lime juice, 2 dashes of Angostura bitters, 5ml sugar syrup, 100ml chilled ginger beer.

10. Raspberry Lemon Drop Martini

The essentials: 60ml Raspberry vodka, 60ml Triple Sec, 60ml Lemon Juice, 6 raspberries, 1tsp simple syrup, sugar.
